By spring 20 to 22nd of march which is first day of spring. most often this is a dish that would be served to celebrate the big holiday & is served with Sabzi polo which is ( chopped green herbs Cilantro, green onion parsley mixed with rice.. or Sheeveed Baghaleh polo which is ( rice with chopped dill & fresh green Fava or Lima beans.

"Raw organic hummus. A treat from traditionally cooked hummus and causes very little gas because all the enzymes are still there. When I serve this I make a depression in the middle and fill it with olive oil. Serve with pita bread, carrot or celery sticks, or small romaine leaves."

The Mediterranean version of the ever popular Mexican layered dip. Instead of using garlic salt, I mix a large clove of pressed garlic with the hummus. Serve with toasted pita, flat bread or tortilla chips.
